My wonderful roommates gave me a zappo’s gift certificate for my birthday, and I finally settled on a pair of shoes! My old asics have done me well, but they were really wearing down so it was time for something new:

I recently finished The Color of Water by James McBride. I bought it a little under three years ago (wow, time is flying) in a used bookstore in NYC across the street from Magnolia Bakery. My mom and had just gobbled down our cupcakes and wandered in, so upon the recommendation of my mom I purchased The Color of Water. For some reason I just never read it. I could only fit a limited number of books in my bags to Seattle, so I picked only ones I hadn’t yet read. This one came along for the ride. For whatever reason I picked it up to read on Sunday, and finished it last night. It is simple and reads quickly, but eloquently written. For some reason it just spoke to me and I really enjoyed it.

Cold Tomato Zucchini Pasta Salad with Sherry Shallot Vinaigrette

Sherry Shallot Vinaigrette

1/2 cup Extra Virgin Olive Oil
1/4 cup Sherry Vinegar
1 Shallot, chopped
1/ 2 clove Garlic, chopped
1/2 teaspoon Salt
Lots of fresh ground black pepper to taste

Puree the ingredients together in a small processor or blender. Set aside.

Tomato Zucchini Pasta
1 pound riccioli shaped pasta, or any favorite shape
2 medium sized zucchini, or 1 large thinly sliced into half moons
1 cup chopped scallions
3-4 ripe Roma tomatoes, chopped
1 tablespoon dried parsley
1 recipe Sherry Shallot Vinaigrette
Salt and pepper to taste

1. Boil the pasta according to the package directions in heavily salted water. Drain and rinse in cold water.

2. Meanwhile, prepare the Sherry Shallot Vinaigrette.

3. Toss the pasta together in a large bowl with the dressing and the rest of the ingredients. Salt and pepper to taste. Serve immediately or store covered in the refrigerator until chilled.

A new year means new resolutions.

I really thought I did a new year’s resolutions post last year, but I went searching and sure couldn’t find it. I don’t remember what my resolutions were last year. I’m sure “go to the gym” was one of them, just like it is every year. And every year I FAIL at that. Maybe 2009 will be my year.

Christmas break has been wonderful! Rhiannon spent Christmas with us and got a real dose of America, haaa.

I didn’t read all that I wanted to yet. Actually, I’ve done no reading at all. I guess I have a few days left, but I doubt I’ll get around to finishing Harry Potter 7. Will it ever happen?

Also, I went to see Twilight and I liked it. The end.
